We were treated to an AMAZING apple cake made by Tibi and Simona this week using as many Kalotaszeg ingredients as possible. Let’s hope there is a bit left for Mihaela, Misi and the Popp family who are coming tomorrow to repair Valeni 208, naturally.

We were also excited to see how fast and how delicious looking and healthy sounding Klara made this amazing flan, ‘Kalota flour, egg&walnut frangipan and tasty plums’

Marjoram –add two teaspoons of marjoram to a cup of 7 ounces of cold water. Let it soak for 24 hours and add honey to it. An even stronger tea may be made by adding 6 teaspoons marjoram to 7 ounces of water. Marjoram contains antioxidants, Vitamin A/C/Calcium and iron. It aids digestion; protects against common illness, such as influenza, food posoning) antiinflamitory (migraines, body aches); it’s also an antidepressant; – Agi, Alunis

We also asked Nelu about feeding the bees with artificial honey stuff .. he said now they get some food; and also in the spring (the exact timing is weather dependant). If the bees do not have food, they are not strong to survive illness/adverse weather/create their hives. Every commerical producer does this and there is only one year in ten when you don’t have to do it.

PASTA/LASKA/TAIETEI – Zsuzsa, Izvorul Crisului

Cheese – Szilard, Alunis. We spoke to Szilard about his amazing orange, attractive cheese rinds and he told us that he has been experiementing with different cultures to achieve this beautiful affect!

Kale – Agi neni (and we) were delighted again to find decent sized kale leaves ready to pick. Kale is always better after the first frost, but it is super healthy all year too!

Bread – Berde lldiko, baked in Alunis with nut and wheat flours from Valeni and kovasz/maia. The bread becomes more kovasz/maia … it is amazing.

Always get everything out of plastic and the paper as soon as possible; even things in clean packaging like Pasta and bread. I’ve been asking how pasta was stored pre-plastic days and I was told that it was put into a clean fabric napsack and suspended. We recommend this!
