The solar drier is now in Valeni, and our neighbour, Erzsi neni is helping prepare beans and peas for drying and covering when the rain comes and we are here, and not there. If you come on Saturday, you’ll have the chance to see it and meet her!
Yes, don’t forget invitation to our annual tasting and forage event .. at Bagolyvar, Valeni/Valko 9 July, 14.00/18.00 as part of village zilele weekend program. On G/K part, we have Szilard’s full range (at the moment); oil, butter, flour, some compots, some vinegar, some wine, anything else interesting we can find. We are hoping Szekely Edit is coming, the Csipet Csapat will be there, and Sandor Erzsi. Let me know if you can come!
This week, Kati was weeding in Damos and I thought (wrongly) Gyongy wasn’t at home, so it was me and Douglas collecting, weeding etc. we got back to Huedin too late, too tired SO … if you know someone who would value the experience to come to Damos (very accessible from Huedin) village for one afternoon, night, morning to learn about veggies/gardens; the market and the ins and outs of Gustare with us; please put them in touch with us.

Unusual mixed salad leaves – if you don’t know what something is, please ask us!– … garden and wild rucola…. baby lettuce … endive (pale green and crinkly), … nasturtium leaves . quite a few blue borage flower (with a lovely cucumbery taste!) red leaves – Douglas and Agi, Huedin, Damos, and Alunis
catalonia lettuce big wavy leaves – Erzsi, Huedin. Earlier in the year, Erzsi wanted some nut oil for her daughter to try, so we set up this swop. Her lettuce came just at the right time, when ours are making seeds for next year.
soska/macris/sorrel added to the salad – Bozse, Bicalat; brought to market by Piroska, or Bozse to have enough money to buy cigarettes for her son (yes, that is the downside!!).

chives – Agi and Douglas, Huedin, Damos, and Alunis. Even I know start to call them ‘pasztor hagyma’ .. the shepherd’s onion. Agi neni named them this about two years ago and it stuck!!
Parsley –Piroska Ketesd and Domi, Huedin (I paid for the herbs I picked up my mistake thinking them mine, last week!!)

And don’t compost your pods before boiling them up, cooling, squeezing (or mouli) for a rich tasty stock liquid.
We will be drying these in the solar drier for winter use. They are very tasty and very healthy. A must for any vegetarian.
Keseru/ustoroita mushrooms – Piroska, Tetis family. For ourselves we managed to buy a small bag of ‘chicken of the woods’ mushroom which we have never eaten and are pretty excited about!
Castraveti/ugorka/cucumber – Csirpe Erzsi, Tetis, via her daughter in law, Annuska. We haven’t had the joy of meeting Csirpe Erzsi for a long time now because she is too old to come to market. It is always something incredible for me how the market is a kind of final frontier.
Krumpli, cartofi, Potatoes – Gyongy came from Jakotelke with her new potatoes, earth fertilised with sheep shit and no colarado (because they are earliest).
The last of the very very small cabbage! – Zsuzsi, Bicalat .
Ribizli/redcurrants – Ibolya, Horlacea. Ibolya is one of my old friends and she is always so happy when Gustare supports her.
Meggy/visine/sour cherries – Agi Huedin. Agi doesn’t have many cherries this year but what she has are amazing.
Summer apples/nyari alma/mere de vara – Agi Huedin

GREENS EXTRAs – spinach – as above.
Green corriander seeds – Agi, Alunis. I love approx a teaspoon of these crushed and fried at the beginning of cooking with onion and chilli.
EGGS – Kati, Ibolya, (Damos), Kovacs Erzsi (Valeni), Annuska (Ketesd),
PASTA/LASKA/TAIETEI – Eva, and Zsuzsi Izvorul Crisului
Flowers – Maria, Huedin. Maria is making such gorgeous bouquets. It is her feverfew – good for headaches .. the little white and yellow flowers. If anyone would like some extra, I can ask her.
Honey – Olimpia and Nelu, bees are now in Huedin, resting after their late spring journey for the bees to Bihor for the salcam/akacfa ..
MATURE cow and sheep cheese – Szilard. NEWSFLASH – next week 12th July, Szilard and Ildiko have their annual camp in Alunis; so there will be no cheese delivery.
Apple Juice – The csipet csapat (the little people!), Valko. Made from local variety, autumn Valko apples and pressed, pasteurized in Bica village.
Walnut oil and butter – The csipet csapat (the little people!) and Sandor Erzsi, Valko
Bread – Berde lldiko, baked in Alunis with flours from Valeni and kovasz/maia. The bread becomes more kovasz/maia … it is amazing.
Always get everything out of plastic as soon as possible; even things in clean plastic like Pasta. I’ve been asking how pasta was stored pre-plastic days and I was told that it was put into a clean fabric napsack and suspended. It was so good/so dry.
